Pine Honey from the Apiary of the Holy Pantokrator Monastery
Produced from honeydew found on the trunk and branches of trees.
Pine honey is collected from honeydew on tree trunks and branches. It has a dark color and a pleasant taste. Its aroma is less intense than that of floral honey, as it is not derived from flowers. Additionally, this honey does not crystallize easily and is considered very beneficial due to its high concentration of trace elements. Bees collect pine honey from trees in the forest above the Pantokrator Monastery, as well as from other pine forests on Mount Athos. The harvest is carried out by the monks themselves.
Properties:
- Pine honey belongs to the dark honey varieties. When harvested, it has a brownish-green tint and darkens further over time.
- It has a mild aroma and is less sweet compared to other types of honey.
- Initially, pine honey has a liquid consistency, but it crystallizes after about one and a half to two years.
